THE BEST GLUTEN FREE BREAD

I have been experimenting with new recipes. I love this homemade gluten free bread from Unrefined Kitchen. I love that this recipe because it can be made without a bread maker. Just a loaf pan, your ingredients and an stove. 

Ingredients needed:
3/4 cup of coconut flour ( You could use all purpose gluten free flour too).
1/2 cup of grounded flax seed. 
1/2 cup of almonds
1/2 cup of arrowroot powder ( which is a thickener)
1 teaspoon of salt
2 teaspoons of baking soda
1/2 cup of applesauce
1/4 cup of coconut oil ( melted) 
6 eggs
2 tablespoons of honey

Once you buy the flour you can make probably three loafs with the bag of flour. 

Directions: 
Preheat oven to 350
Combine dry ingredients in one bowl
Combine wet ingredients in another bowl( separate from dry ingredients)
Grease pan and then pour batter into loaf pan. 
Bake at 350 for 35 to 45 minutes

If you are gluten free you will love this moist bread. I brought it to church one night and it was all gone. 

And its kid approved!!!!

PITA PIZZA RECIPE

Another simple recipe to make with your family and if you have children they can make this themselves. 

Ingredients needed:
1 can of tomato sauce
1 bag of Pita's 
Cheese 
Any spice your desire. 

First you layer the pita with tomato sauce and then put your spices on at the same time. 

Then you need to put on your cheese ( we have also used spinach leaves which is yummy). Finally put your pita pizza into the oven until cheese is melted. They are so yummy.

Homemade Croutons

In order for me to make a recipe it has to be easy. So first our children don't like the crust on there sandwiches so I cut it off and freeze it. 

Ingredients needed:

Oil, I used Coconut Oil
Salt, I used Himalaya Salt
Any crust from your sandwich. 
And seasoning of your choice, we used oregano,salt and pepper. 

Mix all your ingredients together in a bowl. 
Preheat oven to 400 degrees. 

Spread out onto a cookie sheet.  Put into oven and bake on 400 until bread is crunchy about 15 minutes. 

They should also be golden brown. 

Cut up your lettuce,baked chicken, and dressing. We made a Caesar salad but whatever you choose would be great with these croutons. Spread Croutons on your salad and Enjoy. I like these much better than the store bought. 

Peppermint Shake

I know you probably have extra candy canes laying around from Christmas. We made a very easy shake with Frozen Yogurt,Almond Milk and a Candy cane. Blend it together for a Delicious peppermint shake.

Easy Tomato Soup and Grilled Cheese Croutons

Although this soup is not my own, it was one of our favorite's in our family. I got the recipe from the Food Network Magazine. I have used some different ingredients but still great tasting. 

Ingredients needed:

3 tablespoons of olive oil
3 cups yellow onion, chopped
1 tablespoon minced garlic
4 cups veggie broth, they use chicken broth
1 can crushed tomatoes, I buy the organic one
1/2 cup orzo
1/2 cup of heavy cream

Saute onions and garlic.
In big pan place your broth and tomatoes. 
Cook orzo in another pan. 
When finished with above add all ingredients together including the heavy cream and bring to boil for 10 minutes and then serve with Grilled Cheese Croutons. 

We don't have a panini grill so we just make regular grilled cheese made with Gruyere Cheese which has an awesome light hickory smoke taste to it. And we add it to our soup. A great healthy meal for you and your family.

Natural Mosquito Repellent


I thought I would post this recipe on found Online for Natural Mosquito Repellent. 
I bought a spray bottle, grape seed oil, Tea Tree Oil, Citronella and Eucalyptus from our local nutrition store. They recommend that you use Lavender and Lemongrass Oil but our nutrition didn't have it. I didn't use vegetable glycerin. 

Fill the bottle 1/2 way with distilled or boiled water. Then add your witch hazel to fill the rest of the bottle. I didn't do this because it would overflow so I put it into our measuring cup and then poured it all in after everything was in. 

Then you add your herbs, first I did eucalyptus, I don't think it matters which one is first. 

Then I added the Citronella. 

Then Tea Tree Oil, about 10/15 drops per bottle depending on how strong you want it. 

Then the grape seed oil as a final touch. 



Finally I labeled the bottle and when I need Mosquito Repellent I have something safe for everyone. I actually used this the other day at our local nature preserve where there is plenty of mosquito's and it worked like a gem. You can add more herbs, it as trail and error for us, but it fun to experiment.

Rice Cake Lunch,Dinner or Snack

So ever since the Daniel Fast I have been trying to eat healthier. A friend shared this recipe with me and it's yummy. Sometimes I have this for lunch or dinner or just a snack.



2 Rice Cakes
Hummus on bottom
Then Shredded Chicken
Cherry Tomatoes chopped in half
With Avocado on top( I normally don't put this on but wanted to try it)

Not many calories and you feel good about eating it.
