I love this time of the year. When the weather is changing, leaves are changing and the smell of the air is fresh. Even here in Florida I have seen some leaves changing colors and the weather has gotten ALOT cooler. I was so excited to go shopping at Walmart to purchase the NEW Cool Whip Frosting for our delicious Pumpkin Pie Cupcakes.
The NEW Cool Whip Frosting comes in several favors:
Vanilla
Cream Cheese
Chocolate
They all look wonderful but we choose vanilla because we felt like that was the best fit for what we were going to make.

Cool Whip is one of my favorite during the holidays or anyday for pumpkin pie and many other desserts that we love to use all year long to celebrate everyday occasions. You don't have to have a party to celebrate LIFE. Everyday we wake up to a fresh new day and that's something to celebrate.
Although we don't celebrate Halloween, we do Celebrate spending time with each other. Before we go home to make our Pumpkin Pie Cupcakes we stopped at the Pumpkin Patch for some FALL pictures and to celebrate everyday occasions.
This is a family affair, we didn't to have a reason to spend time, we just DO IT!!! I think cooking with our kids is so much fun and the children love it too.
First we mixed the dry ingredients in one bowl.
Then we mixed the wet ingredients in our VitaMix.
Stir wet ingredients into dry
The reason I picked these cupcakes was because the recipe came from my friend that made these Pumpkin Pie Cupcakes for our homeschool group one day and they were delicious.
Gluten Free Pumpkin Pie Cupcakes:
1 1/2 cups blanched almond flour
1/4 teaspoon sea salt
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 ground ginger
1 pinch ground cloves
1/2 teaspoon of pumpkin pie seasoning
2 tablespoons coconut oil
1/2 cup agave nectar
2 large eggs
1 cup of canned or fresh pumpkin
Place cupcake liners in pan or grease pan and scoop batter in cupcake liners, Bake at 350 for 40-45 minutes.Cool and then serve with the NEW Cool Whip Frosting on top.

sprinkles,nuts or candy M&M's and enjoy your dessert.
The NEW Cool Whip Frosting is in your freezer section and I was so surprised that when I took it out of the freezer it was very creamy and very easy to spread. And it tasted great!!!
I had our children frost there Pumpkin Pie Cupcakes with the New Cool Whip Frosting. I was delighted that it was so light and fluffy.
We topped our Pumpkin Pie Cupcake with the NEW Cool Whip Frosting and topped it with the new candy corn M&M's.
You can use the NEW Cool Whip Frosting everyday. I love to have tea parties or any occasion so I will be using this frosting instead of regular thick frosting. You can use the regular Cool Whip for Pies and many other desserts as well. Our experience with Cool Whip in general has always been positive and yummy!!!
Our whole family enjoyed our Pumpkin Pie Cupcake with the NEW Cool Whip Frosting!!!!
