I have been searching the web for yummy raw recipes and I found a keeper. I have shared this recipe with several people and everyone of them has loved it.
This is the crust of the Key Lime Pie.
Ingredients:
1 cup raw, unsalted macadamia nuts
1/2 cup coconut flakes
4-5 dates
Pinch of salt
Blend in a VitaMix(Blender) until the dough sticks together well, don't over process. Place your mixture into your pie pan and press down to stick together.

Next your want to prepare the filling for your pie.
Filling:
1 avocado
Juice of 2 limes
3 Tbsp agave nectar (or honey or whatever liquid sweetener you prefer)
3 Tbsp melted coconut oil
Pinch of salt
Blend well, adjust sweetness to your taste. Scrape into bowl with pressed crust and let it chill in the fridge for several hours, until firm. You can speed up the process in the freezer but make sure you slice it before it gets too frozen.

After your Key Lime Pie has chilled it is ready to eat. Our Key Lime Pie is one of our favorite's in our house.Our son says he wants me to make this for his birthday. That says alot. I have made this pie several times and I feel so good feeding this to our children and they are still eating something sweet but very healthy:)

Avocado in Key Lime Pie? Hum--it dies give it a nice green color-and I happen to Love Avocado!! I also love Key Lime Pie--and no baking--sounds better all the time!
